Oilfield Cafe: Mississippi Roast

I’ve said it before, but I’ll say it again: I love my crock-pot.  Any day that I can put everything together in the morning, turn on the pot, and then walk away is a great day. Especially when what’s in the pot smells as good as this roast! I made this on a Friday when I knew we would be out for most of the day with family. I was even able to re-heat the leftovers on Sunday and it tasted just as good. Gotta love making that dollar stretch! (Frugal Mommas say “What?!”)

Ingredients:

-Chuck roast

-1 packet of ranch dressing mix

-1 packet of Au Jus mix

– a stick of butter

-5 pepperoncini peppers

How to make it:

-Put roast in crock-pot

-Add all other ingredients

-DO NOT ADD WATER! I know it may seem weird, but the roast makes plenty of it’s own juice.

-Cook on low for 7-8 hours

I served with rice, but you could also serve with mashed potatoes.
