Not Your Grandma’s Crock-Pot Potato Soup


One of my very favorite meals when I was a little girl was my Grandma Harper’s Potato Soup. She always made it so effortlessly and no matter the time of day or time or year it hit the spot! Today, even at 27 and as a wife and mommy Potato Soup is still hands down one of my favorite meals. My Oilfield Man (OFM) hardly considers any soup as an entire meal, but on the days he is gone at the rig, my daughter and I eat soup for a meal at least a few times a week. Probably one of the biggest reasons I prefer to make soup for family meals is that I can throw all my ingredients in my Crock-Pot and it is ready when I get home from work. The house smells delicious, and our meal is hot and ready to serve as if I had been home all day cooking my behind off in the kitchen. Although this new Potato Soup recipe I came across cannot even compare to Grandma Harper’s, let’s be serious no soup in this lifetime ever will, it is still a good substitute for cooler weather and  busier days.

What You Need:

 1 30oz. bag of frozen, shredded hash browns {I used Ore Ida}

 3 14oz. cans of chicken broth

 1 can of cream of chicken soup

 1/2 cup onion, chopped

 1/4 tsp. ground pepper

 1 pkg. cream cheese {don’t use fat free.  It WON’T melt!!!}

To The Crock Pot:

 In a crockpot, combine everything EXCEPT for the cream cheese.  Cook for 6-8 hours on low heat.  About 1 hour before serving, add cream cheese and keep heated until thoroughly melted.  Serve with cheese, sour cream, bacon bits, or diced green onions. A special kick for all you spicy lovers, sprinkle diced fresh jalapeno on top, it is my hubby’s favorite!
