The Oilfield Cafe: Wash Day Beans and Rice

Living in a camper not be the most traditional of lifestyles, but I do happen to be a traditionalist about some things. Doing the wash on Monday happens to be one of them. With all the carrying, washing, drying, folding and putting away that has to be done I like to cook a simple meal to ensure that dinner time doesn’t become a hassle.

In keeping with this traditionalist mindset I have adopted the New Orleans tradition of cooking beans and rice on Monday. While I can’t get away with cooking it every Monday since my family begins to complain after about three consecutive Mondays of it, I do try to do it as often as I can.  It’s easy to throw together in the morning and forget about until supper time.

There are many different recipes for red beans and rice and while this is the version that my family likes, it is pretty basic so you could easily add or take away ingredients as it suits you and your family. Perhaps add some cayenne or hot sauce if your family likes spicier food or maybe take out the sausage if you’d prefer to have a meatless Monday.

Wash Day Beans and Rice

1 lb dry small red beans

1 green bell pepper

1 yellow onion

3 garlic cloves

1 tbsp paprika

1 chicken bullion cube

1 lb of Andouille or dinner sausage

2 c white rice

Rinse dry red beans and pick out any split or bad beans. Place beans in the crockpot and cover with water. Cut up onion, bell pepper, garlic and sausage and add to the beans. Add in bullion and paprika. Add a bit more water if needed. You want to add enough water to ensure that the dry beans have enough water to soak up, but not so much that the consistency is too soupy. Turn crockpot on Low and let it cook for approximately 8 hours.

Approximately 30 minutes before dinner time you will want to cook your rice. Add 2 cups of white rice to 4 cups of water along with ½ tsp salt. Bring to a boil and then reduce heat and cover until rice is tender.

Place desired amount of rice on plate and cover with beans. Serve and enjoy!
